Citrus Yogurt Muffins

These mouth watering muffins are supposedly 'low fat' but to be honest i'm not too sure if thats the case. Of course, it is way healthier than the average muffin you'd get at most coffee shops and it certainly tastes quite delicious. So give it a try, and if you have any ideas on what to use to replace the sugar, do let me know!

Ingredients:

200g plain flour
130g caster sugar
1 tbsp grated lemon zest
1 tbsp grated orange zest
1 tbsp grated lime zest
1 tbsp baking powder
Pinch of salt
225 ml fat free plain yogurt
115 ml sunflower oil
1 lightly beaten egg

1. Preheat the oven to 200C and grease a 12 cup muffin tin.
2. In a medium bowl, combine flour, sugar, zest, baking powder and salt. In a large bowl, beat the yogurt, oil, and egg until well blended. Add the flour mixture, stirring until just combined. Do not overmix.
3. Spoon the batter into the prepared pan. Bake for 20 minutes. Remove tin from oven and cool for 5 minutes. Then remove the muffins and serve warm.
4. Store in an airtight container for up to 3 days, or freeze for up to 3 months.

Banana Bread

I used a very basic recipe for this banana bread because I find that sometimes, they really are the best. Only thing I switched up was using oil instead of butter. If you want to make this recipe as healthy as possible, try lessening the amount of sugar or using honey instead. Of course you'd have to add more flour because it might become too runny. Either way, this recipe is pretty good and perfect for your afternoon tea. 

Ingredients:

3/4 cup sugar
1/3 cup vegetable oil (I used canola oil)
2 whole eggs
1 cup mashed very ripe bananas (I used 3 medium sized ripe bananas)
3/4 tsp grated lemon rind
1 1/2 cups all purpose-flour
3/4 tsp baking soda
1/2 tsp salt

1. Preheat oven to 160C. In a large mixing bowl, beat together sugar, oil and eggs. Stir in lemon rind and banana. Sift together flour, baking soda and salt. Add to banana mixture and mix until well blended.
2. Pour into a well greased loaf tin and bake for 50 to 60 minutes or until a toothpick inserted in center of loaf comes out clean. Remove from pan and cool on rack.

Lemon Pound Cake

It's been ages since I last baked anything sweet. So I felt that it was about time to whip out those cook books and look for something easy to make. I chose this lemon pound cake recipe because I had a lemon lying around that appeared to be almost pass its sell date. Thankfully, the cake turned out pretty well, not too sweet and not too rich. Goes well with a nice cup of tea.

Ingredients:

150g butter
3 eggs separated
150g plain flour
150g caster sugar
Grated zest of 1 lemon

1. Preheat the oven to 160C. Grease a 9 inch round baking tin with butter. Weigh the eggs and measure out equal quantities of the flour, sugar and butter. Melt the butter and allow to cool.
2. Separate the eggs and whisk the yolks with the sugar for 5 minutes using an electric whisk, until pale and tripled in volume.
3. Gradually fold in the flour and butter in alternating spoonfuls. Add the lemon zest. Whisk the egg whites to stiff peaks and fold into the cake mixture. Pour the mixture into the cake tin and bake for 30 to 40 minutes.

Toad In The Hole
I always have a little laugh when I tell my friends I am making toad in the hole for dinner. Their expressions are priceless, a mixture of confusion and horror! Well ladies and gents, the real deal about toad in the hole is that it does not include amphibians, rather, a couple of yummy sausages enveloped in a golden batter. I simply love making this meal because it is easy and always hits the spot.

Ingredients:

8 large sausages (good quality)
1 tablespoon of olive oil
100g flour
1/4 teaspoon salt
2 eggs, beaten
300ml milk
1 teaspoon dried herbs (I always use rosemary and thyme)
Freshly ground black pepper

1. Preheat oven to 220C. Put the sausages in a shallow ovenproof dish or baking tin with the oil and bake for 5 to 10 minutes, turning the sausages occasionally to brown on all sides.
2. Meanwhile, make the batter. Sift the flour and salt into mixing bowl. Make a well in the center and put in the beaten eggs and half the milk. Mix the flour into the eggs and milk, gradually drawing flour in from both sides. Stir in remaining milk and beat vigorously with a whisk to make the batter smooth. Stir in the dried herbs and pepper.
3. Pour batter into the dish with the sausages and continue to bake in the hot oven for a further 40 to 45 minutes or until the batter has risen and is brown and crisp. Serve immediately with baked beans.

Christmas Pudding

It is a tradition of my mother and my mothers mother to bake the Christmas pudding way in advance. I'm talking about two months before serving. The reason this is done is to give the pudding time to mature. the taste is more intense and that is what makes up a great Christmas pudding. However, this recipe itself does not need to be made early, in fact two days before Christmas should be just fine, but I do recommend that next year, you at least give it a month to mature for that added zing! Warning in advance, this is a boozy dish and I firmly believe that it can't be made any other way. It's tradition after all!

Ingredients:

225g dark molasses sugar
400g fresh white breadcrumbs
225 shredded butter
1/2 teaspoon salt
1 teaspoon mixed spice
350g sultanas
350g raisins
225g currants
100g candied peel, chopped
50g blanched almond, finely chopped
2 large apples, peeled, cored and finely chopped
Finely grated rind and juice of 1/2 lemon
2 eggs, beaten
300ml Guinness
Approx 150ml milk

1. Put the dry ingredients, dried fruit, candied peel and chopped almonds in a large mixing bowl and stir well to mix. Add the apples with the lemon rind and juice, eggs and Guinness. Stir well to mix. Stir in enough milk to make a soft dropping consistency.
2. Pour the mixture into two greased pudding basins. Cover the tops of the pudding with circles of greased grease-proof paper, then with foil. Fold a pleat in the center and tie string around the rim. Leave overnight.
3. Place the basins in the top of a steamer or a large pan of gently bubbling water and steam for 4 to 5 hours, topping up water level from time to time during cooking.
4. Remove the basins carefully from the pan and leave until quite cold. Discard the foil and grease-proof paper and replace with fresh grease-proof paper and foil before storing the the fridge.
5. Steam again for about 2 hours before serving, with brand butter or warm custard.

Christmas Sugar Cookies

Ho! Ho! Ho! It's December and that means it is time to put on your elastic waist pants and eat eat away! Okay, i'm kidding. Really, please don't listen to me because I don't want to be the source of the amount of sugar that's in your blood. But these cookies might just do it!

I spent basically a day filled with baking and icing these babies and let me tell you, I had a ball. Nothing quite as soothing as getting lost in a creative process. So if you have the desire to try your hand at icing some sugar cookies for Christmas, or really, any other festive holiday, the Royal Icing recipe I used was brilliant, especially for a first timer like myself.

Ingredients for Sugar Cookies (1 batch):

90g soft unsalted butter
100g caster sugar
1 large egg
1/2 teaspoon real vanilla extract
200g plain flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Ingredients for Royal Icing (makes enough icing for 3 - 4 batches of the sugar cookie recipe)

3/4 cup of warm water
5 tablespoons meringue powder
1 tsp cream of tartar
1 kg powdered icing sugar
Food colouring of choice

1. Cream the butter and sugar together until pale and moving towards mousiness, then beat in the egg and vanilla. In another bowl, combine flour, baking powder and salt. Add the dry ingredients to the butter and eggs, mix gently. If you think the finished mixture is too sticky to be rolled out, add flour sparingly. Form into a ball, press down into a fat disc and wrap in clingfilm, rest in the fridge for at least an hour.
2. Preheat the oven to 180C. Sprinkle a suitable surface with flour, place dough on it and sprinkle a little more flour on top of that. Then roll it out to a thickness of about 1/2cm. Cut into shapes, dipping the cutter into flour as you go, and place the biscuits a little apart on a lined baking tin.
3. Bake for 8 - 12 minutes. When they are ready, expect them to be tinged a pronounced gold around the edges. They'll be soft still in the middle, but will set while they cool on a wire rack.
4. Meanwhile, in a mixer bowl, pour in warm water and meringue powder. Mix it with a whisk by hand until it is frothy and thickened for about 30 seconds.
5. Add cream of tartar and mix for another 30seconds. Pour in all the icing sugar at once and place the bowl on the mixer. Using the paddle attachment on the lowest speed, mix slowly for a full 10 minutes till the icing gets thick and creamy.
6. Cover the bowl with a dampened tea towel to prevent crusting or drying. Tint with food colouring.
7. Use the 10 second rule to test if the icing is too thin or thick. Simply draw a knife through the icing and count till ten. If the icing smooths out the line before 10 seconds, it is too runny and you will need to add extra icing sugar. If it fills in within the 10 seconds, it should be good enough to ice. Remember, if the icing is too runny, you will end up having a messy cookie. If it is too thick, you can add warm water to reach the desired consistency. Have fun!

Ginger Spice Biscuits


When November reaches and Christmas is fast approaching, I can't help but get into the festive spirit. I think its rather excusable since everywhere I go, decorations are up and the scent of spice is in the air. And when I mean spice, i'm not talking about what we put in curry. No, i'm talking about ginger, cinnamon and nutmeg; which is prevalent in the best Christmas recipes.

Ingredients:

1 cup (225g) flour
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp group cinnamon
1/2 tsp baking soda
60g butter (chopped)
1/4 cup honey
2 1/2 tbsp golden syrup (warmed)

1. Heat oven to 180C. Mix all ingredients in a large bowl except butter, honey and syrup.
2. Rub butter into the dry ingredients until the mixture feels like breadcrumbs.
3. Stir in honey and syrup. Turn dough onto lightly floured surface and knead until soft and mixed well.
4. Grease baking tray. Roll the dough into small round balls and place 3cm apart on the baking tray. Bake in the oven for 10 to 15 minutes. Leave to cool for a few minutes before transferring to a rack. Enjoy!

Rosemary Olive Oil Bread

I was sold on this bread recipe the second I took a bite out of it. I just wish it didn't take so long to make, but I guess the good stuff never comes easily. Putting the time factor aside, I do highly recommend you give this one a try, considering the fact that it is somewhat healthier than the choices you have in the supermarket. I swear it is worth the effort! Really!

Ingredients:

1 cup warm water
1 tbsp brown sugar
2 tsp active dry yeast
1 tsp salt
2 tbsp fresh rosemary (chopped)
Pinch of ground garlic
Pinch of dried oregano
Pinch of dried basil
1/4 tsp black pepper
2 tbsp extra virgin olive oil
1 1/2 white whole wheat flour

1. In a large bowl, combine warm water, sugar and yeast. Let sit for 10 minutes to proof.
2. Stir in the salt, rosemary, seasonings, olive oil and whole wheat flour. Add the bread flour and stir until dough forms a ball. Knead on a lightly floured surface for about 5 minutes, adding more flour as necessary to prevent sticking until smooth.
3. Place dough in a lightly greased bowl; cover and let rise until doubled in size for about 1 hour.
4. Punch down the dough and form it into a round loaf. Place it on a parchment paper; cover and let rise again for a further 45 minutes.
5. Meanwhile preheat the oven to 200 C and pizza stone if you have one. Pizza stone is a great way to get that rustic taste and acts as if you baked it in a wood fire oven. I don't have one but it still turned out great!
6. Once the dough has risen, place it in the oven and bake for 35 to 45 minutes or until the top is golden brown and sounds hollow when tapped. Now tap yourself on the back, make a cup of tea and enjoy a warm slice of freshly baked bread!

Beef Casserole

Nothing I like more than a beef casserole on a rainy day! Try this delicious recipe out and serve it with rice or mashed potatoes. It tastes even better after a couple of days with a slice of bread. Add chili for spice and if you want it halal, use non alcoholic red wine. Enjoy! 


2 lbs beef (Cut into small cubes)
3 tbsp oil
4 medium onions
1 garlic
2 tbsp paprika
salt & pepper
1 tsp caraway seeds
1 bay leaf
3 cups water
2 cups beef stock
1/2 cup red wine (or non alcoholic red wine)
4 medium potatoes, cubed
2 carrots, chopped
3 tbsp tomato paste

1. Brown the meat in oil/butter. Add the onions and garlic and fry until the onions are translucent.
2. Add paprika, bay leaf, caraway seeds, water and stock. Bring to boil, cover and simmer for about 45 minutes. Add the potatoes and carrots and simmer for an additional 45 minutes.
3. Stir in the tomato paste and red wine. Add salt and pepper to taste. Remove the bay leaf before serving.

Chocolate Chip Cookies

Just like the cookie monster, I find this recipe pretty hard to resist. It is ideal for kids birthday parties as an additional desert and the batter makes up to 50 cookies! So there should be enough for everyone! I like to take it out of the oven slightly early so the cookie is soft, but if you like them crunchy and firm, leave them in for the 'said' time below.

Ingredients:

250g unsalted butter, softened
1 tsp vanilla extract
150g superfine sugar
150g brown sugar
1 egg
335g plain flour
1 tsp bicarbonate of soda
300g chocolate chips

1.Beat butter, extract, sugars and egg in small bowl with an electric mixer until light and fluffy. Transfer to large bowl.
2. Stir combined sifted flour and soda, in two batches, into egg mixture. Stir in chocolate chips, cover and refrigerate for 1 hour.
3.  Preheat oven to moderate (180C).
4. Roll level tablespoons of the dough into balls; place on greased oven trays 3cm apart. Place cookies in oven for about 12 minutes to 15 minutes. Cool cookies on tray.

Apple Cinnamon Crumble

This is the easiest, most simplest recipe that guarantees satisfaction. My mom taught me how to make it, as pretty much all my baking skills I learned from her. Basically it's by using the 6:3:3 method (in ounces). It is a fail proof method to baking any crumble.

Ingredients:

6oz flour (170g)
3oz sugar (85g)
3oz butter (85g)
5 medium sized apples
1/4 tsp cinnamon

1. Preheat oven to 190C
2. Peel and core the apples and cut up into chunks. Put apples into a pan with water and cook over a low heat for 5 minutes. Drain and place the apples into an ovenproof dish. Sprinkle cinnamon onto the apples.
3. Sift flour into a large bowl and rub the chopped up butter lightly into the flour mixture.
4. Add sugar and combine gently.
5. Cover fruit with crumble mixture and bake for approximately 20 minutes until the crumble is golden and the apple is hot. Serve warm with custard or ice cream.

Muffin Doughnuts

Seems to be a craze lately with doughnuts in the form of muffins. They says it is less fattening but really, once it's brushed with butter and dusted with sugar, lets not kid ourselves. I am not knocking them though, because after having one, I seriously wanted another. Deliciously sweet and comforting, these baked goodies would be a hit at any kids party or any persons tummy. So give it a try and get ready to hit the gym after!

Ingredients:

3/4 cup sugar
1 egg
1/4 cup vegetable oil
3/4 cup milk
1 tsp vanilla extract
1 1/2 cups flour
2 tsp baking powder
1/4 tsp salt
1/4 tsp nutmeg

Coating:

2 tbsp melted butter
1/2 superfine sugar

1. Lightly grease a muffin tin with vegetable oil or spray
2. In a large bowl, beat together sugar and egg until light in colour. Add vegetable oil, milk and vanilla to sugar mixture and combine.
3. In a separate bowl, combine flour, baking powder, salt, nutmeg. Then pour into liquid mixture and stir to combine.
4. Fill muffin 3/4 full and bake in a 180C preheated oven for 18-20 minutes, or until a tester inserted in the middle comes out clean. Leave to cool on rack before brushing melted butter over and sprinkling with sugar.

Apple & Mixed Peel Rock Cakes

I bet you expected a cake. Well sorry to tell you this but while they are called cakes (no I idea why) they are in fact more of a soft cookie. But still, lets not talk down this recipe because it is seriously yummy! A real treat for kids and adults alike, this very 'quick' mix recipe is ideal for picnics and lunch boxes and can handle a bit of rough treatment in the school bag. Try serve them hot from the oven with butter and they are delicious.

Ingredients:

2 cups self raising flour
1/4 teaspoon ground cinnamon
1/3 cup castor sugar
90g butter, chopped
1 cup chopped up apples (or sultanas if you prefer)
2 tbs mixed peel
1 egg, lightly beaten
1/3 cup milk

1. Sift flour, cinnamon and sugar into a medium bowl, add butter and rub in with fingertips. Stir in fruit and peel with a wooden spoon.
2. Make well in the center of dry ingredients, add egg and enough milk to give a moist but firm consistency. If mixture is too soft, cakes will spread too much during the cooking time. 
3. Place 2 heaped tablespoons mixture onto lightly greased oven tray. Leave about 5cm between each cake to allow them to spread slightly. 
4. Bake in oven for 15 to 20 minutes or until lightly browned. Don't worry about the how hard it feels, it should be light and soft on the inside. Enjoy!

Like a lovely soft cookie, these 'cakes' are a real treat for kids and adults alike.

Raya Shortbread Biscuits
Hari Raya is just around the corner and I can imagine some of you are already taking out the pots and baking tins and whisking away! I've already baked a couple of sugary delights for the big celebration that is the first day of Syawal, but the one recipe I want to share with you, which i find the most fun to do, is an easy shortbread biscuit recipe topped with a bright coloured icing. I can guarantee everyone, especially children will appreciate these rich biscuits so give it a try! Fair warning in advance, it is quite sweet.

Ingredients:

(Shortbread)
150g butter
100g caster sugar
275g flour

(Icing)

150g icing sugar, sieved
Food colouring, preferably pastes

1. Preheat oven to 180C. Cream the butter and sugar together in a mixing bowl. Work in the flour with a wooden spoon or electric or rotary beater.
2. On a lightly floured surface, roll the dough using a rolling pin until it is smooth and with a thickness of around 1cm. Cut into desired shapes (dipping the cutter into flour as you go) and place onto a well greased baking tray. Leave a little space between biscuits.
3. Bake for 15 to 20 minutes or until shortbread is golden in colour and remove from oven and leave to cool.
4. Put a couple of tablespoons of hot water into a large bowl, add the sieved icing sugar and mix together, adding more water as you need to form a thick paste. Colour as desired. Make sure you ice the shortbread when they are cool and if the icing is too watery, add more icing sugar.

Chocolate Chocolate Chip Walnut Muffins


Yup! A mouthful indeed. I baked these yummy muffins simply for Lars. He has been having quite the craving for muffins lately. This recipe is by Nigella Lawson, although she omits the walnuts. Either way, it tastes pretty good. Try it out!

Ingredients:

1 3/4 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
2 tbsp cocoa powder
3/4 cup superfine sugar
3/4 cup chocolate chip (1/4 for sprinkling)
3/4 cup walnuts, crushed (1/4 for sprinkling)
1 cup milk
1/3 cup plus 2 tsp vegetable oil
1 egg
1 tsp vanilla extract

1. Preheat oven to 200 C. Put flour, baking powder, baking soda, cocoa, sugar and 3/4 cup of the chocolate chips and walnuts into a large bowl.
2. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, leaving it a little lumpy.
3. Spoon the batter into the muffin tin (lined with cases) and sprinkle 1/4 of the chocolate chip and walnut on top. Bake for 20 minutes until muffins are dark, risen and springy. Test with a satay skewer to be sure. Serve warm.

Sticky Toffee Pudding

Firstly, I have to thank my mom, Clare, for giving me this recipe. If it wasnt't for her, I wouldn't have discovered such a delightful easy to make cake, or yet if it wasn't for her, I would never have learnt to bake. So thank you mom! Anyway, for those who are looking to break fast with something sweet or just bake a yummy cake filled with this months must have fruit, dates (duh!), try out this recipe and I guarantee you will be satisfied.

Vanilla Cup Cakes

Personally, when it comes to baking, I think my strengths have always been in the cupcake department. It was pretty much the first thing I baked on my own after leaving the nest, and well, its been more then 10 years since then and I think I've gotten pretty good at it! Excuse me while I toot my horn (ahem, ahem). 

But my Achilles' heel is my laziness in icing decoration and I do know I should put more effort into it, since part of 'cupcaking' is in how it looks. So, really it's still a work in progress. But if you can overlook my messy icing, trust me when I say it tastes amazing! This basic cupcake recipe is the base for all amazing cupcake recipes. Add lemon or apples, raisins and rum, add chocolate and coffee and you've got a winner. 

Ingredients:

Batter
150g butter (softened)
150g castor sugar
175g self-raising flour
3 eggs
1 tsp vanilla extract

Butter Cream Icing
150g butter (softened)
250g icing sugar
1 tsp vanilla extract
2 tsp hot water
(Food colouring optional)

1. Preheat oven to 180C and line a 12 cupcake pan with cupcake papers.
2. Crack the eggs into a cup and beat lightly with a fork.
3. Place all ingredients (for the batter) in a bowl and beat with an electric mixer for 2 minutes until light and creamy.
4. Divide the mixture evenly between the cake cases. Bake for 18 to 20 minutes until risen and firm to touch.
5. Allow to cool for a few minutes and then transfer to a wire rack. Make sure the cupcakes are cooled fully before icing.
6. To make the butter cream icing, beat the butter and icing sugar in a bowl and add in hot water and vanilla extract until icing is light and fluffy. If you wish to add food colouring (I used rose pink), use a satay stick, tip it into the colouring and then stick the satay stick into the icing. Swirl the stick around for a few seconds before removing it. Stir the icing until well combined with the colouring. Repeat if you want a stronger colour.
7. To ice the cupcake, simply place a dollop of icing onto the cupcake and use a warm knife or spatula to spread it evenly. If you have the time, use a pastry bag to decorate instead. Enjoy!

Anzac Biscuits
These chewy, caramelized biscuits from down under happen to be one of my favourite treats to eat. I don't make them often, for good reason (my hips), but when I do, it rarely lasts a day, I blame my husband and his sweet tooth! All kidding aside, with Ramadhan on our door steps and soon after Syawal, I highly recommend putting Anzac biscuits on the Raya cookie list to bake. It may not be traditional, but hey, I doubt anyone will complain once they try one!

Ingredients:

150g plain flour
90g rolled oats
85g desiccated coconut
150g brown sugar
125g unsalted butter
2tbs golden syrup
2tbs water
1tsp bicarbonate soda

1. Preheat oven to 160C. Combine oats, sifted flour, sugar and coconut in a large bowl. In a saucepan, melt butter and stir in golden syrup and water for 1 minute. Stir in soda.
2. Pour in the wet mixture into the dry mixture and mix well.
3. Place rounded teaspoons of mixture 5cm apart onto lightly greased oven tray and place it in the oven for about 20 minutes or until mixture feels firm. Use spatula to loosen biscuits and leave it to cool on the tray. Serve it warm and enjoy!

Apple Cake

I don't know why I don't bake apple cake more often, it's so easy and it is the perfect companion with my afternoon tea. But today I decided to bake it, with a lot of nudging from my husband of course. He is an apple fiend. I went for a dairy free recipe because my toddler is allergic to anything a cow produces and I felt it wouldn't be fair if he didn't get to try a slice when his mommy and daddy are wolfing it down. So anyway, give this a try, I guarantee you'll love it. Makes a great Father's Day cake too!



Ingredients:

1 1/3 cups canola oil
3 cups flour
1tbsp ground cinnamon
1 tsp salt
1 1/2 cups sugar
3 large eggs
3/4 large apples, peeled, cored and chopped into quarters
1 tsp vanilla essence
Optional 1 cup of walnuts




1. Preheat oven to 180C. Grease 25cm round baking tin.
2. In a bowl, sift flour, cinnamon, baking soda and salt. In a separate bowl, using an electric mixer, combine eggs, canola oil, and sugar. Blend well.
3. Gradually add in the dry ingredients into the wet ingredients until well combined. Add vanilla essence.
4. Add apples and nuts if desired and mix well. Pour batter into the well greased baking tin and put in the oven for 75 to 90 minutes or until satay stick inserted in the center comes out clean.
5. Leave to cool for 5 minutes before removing it from the tin to cool completely on a rack. Enjoy!

* Use less sugar, this cake is pretty sweet.
* You can use butter (same amount) instead of canola oil.
