Eat * Bake

Apple & Mixed Peel Rock Cakes

I bet you expected a cake. Well sorry to tell you this but while they are called cakes (no I idea why) they are in fact more of a soft cookie. But still, lets not talk down this recipe because it is seriously yummy! A real treat for kids and adults alike, this very 'quick' mix recipe is ideal for picnics and lunch boxes and can handle a bit of rough treatment in the school bag. Try serve them hot from the oven with butter and they are delicious.

Ingredients:

2 cups self raising flour
1/4 teaspoon ground cinnamon
1/3 cup castor sugar
90g butter, chopped
1 cup chopped up apples (or sultanas if you prefer)
2 tbs mixed peel
1 egg, lightly beaten
1/3 cup milk

1. Sift flour, cinnamon and sugar into a medium bowl, add butter and rub in with fingertips. Stir in fruit and peel with a wooden spoon.
2. Make well in the center of dry ingredients, add egg and enough milk to give a moist but firm consistency. If mixture is too soft, cakes will spread too much during the cooking time. 
3. Place 2 heaped tablespoons mixture onto lightly greased oven tray. Leave about 5cm between each cake to allow them to spread slightly. 
4. Bake in oven for 15 to 20 minutes or until lightly browned. Don't worry about the how hard it feels, it should be light and soft on the inside. Enjoy!

Like a lovely soft cookie, these 'cakes' are a real treat for kids and adults alike.
