Anzac Biscuits
These chewy, caramelized biscuits from down under happen to be one of my favourite treats to eat. I don't make them often, for good reason (my hips), but when I do, it rarely lasts a day, I blame my husband and his sweet tooth! All kidding aside, with Ramadhan on our door steps and soon after Syawal, I highly recommend putting Anzac biscuits on the Raya cookie list to bake. It may not be traditional, but hey, I doubt anyone will complain once they try one!Ingredients:
150g plain flour
90g rolled oats
85g desiccated coconut
150g brown sugar
125g unsalted butter
2tbs golden syrup
2tbs water
1tsp bicarbonate soda
1. Preheat oven to 160C. Combine oats, sifted flour, sugar and coconut in a large bowl. In a saucepan, melt butter and stir in golden syrup and water for 1 minute. Stir in soda.
2. Pour in the wet mixture into the dry mixture and mix well.
3. Place rounded teaspoons of mixture 5cm apart onto lightly greased oven tray and place it in the oven for about 20 minutes or until mixture feels firm. Use spatula to loosen biscuits and leave it to cool on the tray. Serve it warm and enjoy!
