Beef Casserole
Nothing I like more than a beef casserole on a rainy day! Try this delicious recipe out and serve it with rice or mashed potatoes. It tastes even better after a couple of days with a slice of bread. Add chili for spice and if you want it halal, use non alcoholic red wine. Enjoy!
3 tbsp oil
4 medium onions
1 garlic
2 tbsp paprika
salt & pepper
1 tsp caraway seeds
1 bay leaf
3 cups water
2 cups beef stock
1/2 cup red wine (or non alcoholic red wine)
4 medium potatoes, cubed
2 carrots, chopped
3 tbsp tomato paste
1. Brown the meat in oil/butter. Add the onions and garlic and fry until the onions are translucent.
2. Add paprika, bay leaf, caraway seeds, water and stock. Bring to boil, cover and simmer for about 45 minutes. Add the potatoes and carrots and simmer for an additional 45 minutes.
3. Stir in the tomato paste and red wine. Add salt and pepper to taste. Remove the bay leaf before serving.
