Apple Cake
I don't know why I don't bake apple cake more often, it's so easy and it is the perfect companion with my afternoon tea. But today I decided to bake it, with a lot of nudging from my husband of course. He is an apple fiend. I went for a dairy free recipe because my toddler is allergic to anything a cow produces and I felt it wouldn't be fair if he didn't get to try a slice when his mommy and daddy are wolfing it down. So anyway, give this a try, I guarantee you'll love it. Makes a great Father's Day cake too!

Ingredients:
1 1/3 cups canola oil
3 cups flour
1tbsp ground cinnamon
1 tsp salt
1 1/2 cups sugar
3 large eggs
3/4 large apples, peeled, cored and chopped into quarters
1 tsp vanilla essence
Optional 1 cup of walnuts
1. Preheat oven to 180C. Grease 25cm round baking tin.
2. In a bowl, sift flour, cinnamon, baking soda and salt. In a separate bowl, using an electric mixer, combine eggs, canola oil, and sugar. Blend well.
3. Gradually add in the dry ingredients into the wet ingredients until well combined. Add vanilla essence.
4. Add apples and nuts if desired and mix well. Pour batter into the well greased baking tin and put in the oven for 75 to 90 minutes or until satay stick inserted in the center comes out clean.
5. Leave to cool for 5 minutes before removing it from the tin to cool completely on a rack. Enjoy!
* Use less sugar, this cake is pretty sweet.
* You can use butter (same amount) instead of canola oil.
