Chocolate Chip Cookies

Just like the cookie monster, I find this recipe pretty hard to resist. It is ideal for kids birthday parties as an additional desert and the batter makes up to 50 cookies! So there should be enough for everyone! I like to take it out of the oven slightly early so the cookie is soft, but if you like them crunchy and firm, leave them in for the 'said' time below.

Ingredients:

250g unsalted butter, softened
1 tsp vanilla extract
150g superfine sugar
150g brown sugar
1 egg
335g plain flour
1 tsp bicarbonate of soda
300g chocolate chips

1.Beat butter, extract, sugars and egg in small bowl with an electric mixer until light and fluffy. Transfer to large bowl.
2. Stir combined sifted flour and soda, in two batches, into egg mixture. Stir in chocolate chips, cover and refrigerate for 1 hour.
3.  Preheat oven to moderate (180C).
4. Roll level tablespoons of the dough into balls; place on greased oven trays 3cm apart. Place cookies in oven for about 12 minutes to 15 minutes. Cool cookies on tray.
