Banana Bread
I used a very basic recipe for this banana bread because I find that sometimes, they really are the best. Only thing I switched up was using oil instead of butter. If you want to make this recipe as healthy as possible, try lessening the amount of sugar or using honey instead. Of course you'd have to add more flour because it might become too runny. Either way, this recipe is pretty good and perfect for your afternoon tea.
Ingredients:
3/4 cup sugar
1/3 cup vegetable oil (I used canola oil)
2 whole eggs
1 cup mashed very ripe bananas (I used 3 medium sized ripe bananas)
3/4 tsp grated lemon rind
1 1/2 cups all purpose-flour
3/4 tsp baking soda
1/2 tsp salt
1. Preheat oven to 160C. In a large mixing bowl, beat together sugar, oil and eggs. Stir in lemon rind and banana. Sift together flour, baking soda and salt. Add to banana mixture and mix until well blended.
2. Pour into a well greased loaf tin and bake for 50 to 60 minutes or until a toothpick inserted in center of loaf comes out clean. Remove from pan and cool on rack.
