Fudge Brownies



I can't tell you how many times I have changed my brownie recipe, because getting the perfect one for my taste is like striking gold! Okay maybe that is a bit dramatic, but who doesn't like a good brownie?  It is the most satisfying cure for a sweet tooth and it is even better when it's fudgy and a little gooey! So this is my favourite brownie recipe, do switch it up any way you like, add walnuts, orange zest or even cherries.

Ingredients:

250g unsalted butter
200g baking chocolate (70% cocoa solids), broken up
80g cocoa powder
65g plain flour
1tsp baking powder
360g castor sugar
4 large eggs

1. Preheat oven to 180C and line a square (25cm) baking tin with greaseproof paper.
2. In large bowl over simmering water, melt butter and chocolate and mix until smooth.
3. In a separate bowl, mix together dry ingredients (flour, cocoa, baking powder and sugar) then create a well in the center and pour in the chocolate and butter mixture. Stir well.
4. Beat eggs and mix in until you have a silky consistency. Pour mixture in tray and place in oven for 25 minutes or until brownies are springy and gooey! Leave to cool in tin before cutting into squares. Serve it warm with a scoop of ice cream.
