Banana Chocolate Chip Muffins
Today as you can see I'm going Bananas! Well the real reason is that I have a couple of very ripe pisang and I can't just throw them out. So much to my husbands delight, I made his favorite muffins, banana and chocolate chip. Its a very easy recipe and quite fast to make.
Ingredients:
1 1/2 cups flour
4 ripe bananas
1/2 cup white sugar
1 slightly beaten egg
76g butter
1 tsp baking powder
1 tsp baking soda
1/2 teaspoon salt
60g chocolate chips
1. Melt the butter in a saucepan and mash the bananas in a bowl. Once butter is melted, combine it with the bananas, slightly beaten egg and sugar.
2. In a separate bowl, combine flour, baking soda, baking powder and salt.
3. Mix the wet and dry ingredients together with the chocolate chips, do not over stir as the batter should be lumpy.
4. Pour the mixture into a well greased muffin tin and bake at 180 degree C for 20 minutes or until a satay stick inserted in center comes out clean. Cool 2 minutes before removing from pan. Serve warm.
