Basic Scones
Since I can remember, scones have always been part of the Ishak household. It is very easy to make and well worth the small effort and time, because once you've had one, you're not going to stop. Anyway, here is a recipe for basic scones, you can switch it up anyway you like, add raisins or even cooked apple. Either way, it is too good not to try!
Ingredients:
2 cups self-raising flour
2 teaspoons sugar
15g butter, chopped
1 cup milk
1. Sift flour and sugar into medium bowl; rub in butter with fingertips. Make well in center of ingredients, add almost all the milk at once.
2. Mix with flat bladed knife until mixture forms a soft, sticky dough. Add milk only if needed for correct consistency.
3. Turn onto lightly floured surface. Knead gently until smooth (don't knead dough too much or scones will be tough).
4. Pat dough out gently and evenly to approximately 2cm thickness. (Don't use too much flour on the board and don't over-knead the dough or the scones will be tough)
5. Dip 5cm cutter into flour, and cut as many rounds from the dough as you can. Place scones 1cm apart, in a lightly greased baking tray.
6. Brush top with a little extra milk. Bake in a very hot oven for about 15 minutes or until tops are browned and scones sound hollow when tapped. Transfer to wire rack to cool for 2 minutes. Then serve warm with jam and cream. Enjoy!
