Chocolate Chocolate Chip Walnut Muffins


Yup! A mouthful indeed. I baked these yummy muffins simply for Lars. He has been having quite the craving for muffins lately. This recipe is by Nigella Lawson, although she omits the walnuts. Either way, it tastes pretty good. Try it out!

Ingredients:

1 3/4 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
2 tbsp cocoa powder
3/4 cup superfine sugar
3/4 cup chocolate chip (1/4 for sprinkling)
3/4 cup walnuts, crushed (1/4 for sprinkling)
1 cup milk
1/3 cup plus 2 tsp vegetable oil
1 egg
1 tsp vanilla extract

1. Preheat oven to 200 C. Put flour, baking powder, baking soda, cocoa, sugar and 3/4 cup of the chocolate chips and walnuts into a large bowl.
2. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, leaving it a little lumpy.
3. Spoon the batter into the muffin tin (lined with cases) and sprinkle 1/4 of the chocolate chip and walnut on top. Bake for 20 minutes until muffins are dark, risen and springy. Test with a satay skewer to be sure. Serve warm.

  1. that looks so yum babe!definitely gonna try that.hopefully it will look nice as yours.the last time i made muffins/cupcakes its came out looking like mountain shapes.massive mountain shapes!just looked funny!

  2. and also, i think u meant to say satay "skewer". satay with muffins just doesnt go...very well!
